Ingredients for making Mawa Gujiya
Flour – 2 cups
Mawa – 100 grams
Cashew – 1 tbsp
Raisins – 1 tbsp
Chironji – 1 tbsp
Grated dry copra – 2 tbsp
Cardamom – 4-5
Desi ghee – as required
Powdered sugar – 1/2 cup
How to make Mawa Gujiya
To make Mawa Gujiya, first put all purpose flour in a utensil and add 1 teaspoon ghee to it and mix it. Now add water little by little and knead a hard dough. Knead the dough by mashing it well so that it becomes smooth. After this, cover the dough with a cloth and keep it aside for 20-25 minutes. After this, cut small pieces of cashews and raisins and keep them aside.
Now put mawa in a pan and saute it keeping it on medium flame. Mawa has to be roasted till its color turns light brown. After the mawa changes its color, turn off the gas and take it out in a big bowl and keep it aside to cool down. When the mawa cools down, add grated dry copra, chopped dry fruits and raisins to it and mix well. Now add chironji and cardamom seeds to this mixture and mix.
After the stuffing is ready, take the flour and knead it once more to make small balls. Now take one ball and roll it thin like a poori. Take a mold of gujiya and put poori in it and put mawa filling in the middle. Now put a little water on the edge of the puri, close the mold and press lightly. The cutting of its gujiya will be done. Now take out the Gujiya in a plate. Similarly make all the gujiyas. If you want, you can do this process by hand instead of mould.

After the gujiya is ready, put desi ghee in a pan and heat it on medium flame. When the ghee melts, add mawa gujiya to it and deep fry it. Gujiya has to be fried till it turns golden brown. During this, keep turning the gujiyas. When the gujiyas are fried, take them out in a plate. Similarly fry all the Mawa Gujiyas. Mawa Gujiya is ready to add sweetness to Holi. After cooling, store them in an airtight container.
